Fried rice noodle with shrimp




Ingredients : (for 4)
8 medium size            Fresh water shrimp
200 gm.            Dried rice noodle
1 cup            Phad Thai seasoning
1/2 cup             Vegetable oil
5 tbsp.            Chopped small red onion
2 tbsp.            Chopped dried Chinese turnip
1 piece            Yellow Tofu
3            Eggs
300 gm.            Mung bean sprout
200 gm.            Chinese leek
1/2 cup            Coarely pound roasted peanut
Lemon, fish sauce, sugar, grounded chili pepper, banana flower.



1.          Soak noodle in lukewarm water for 10 minutes, drain through strainer. Wash and peel the shrimp, cut and remove the grey sac and black intestine.

2.          Heat 3 tbsp. of oil in saucepan. Saute onion until fragrant, add noodle and stir well. Gradually add water until the noodle is cooked (it may seem as if it stick together).

3.          Slice tofu lengthwise and cut across again into small tiny tread. Heat 3 tbsp. of oil in the frying pan, add the shrimp and fry until turn to scarlet, add tofu, chopped Chinese turnip and phad Thai seasoning, bring to the boil, add the noodle and stir well.

4.          When the sauce diffused through the noodle evely, add the eggs and bean sprout, Chinese leek which is cut in 2 inches length. Remove from heat.

5.           Serve with raw Chinese leek, bean sprout and banana flower and other condiments such as lemon, grounded chili pepper and sugar to taste.
